Professional Cookery student Brandon Timms
After completing the Level 2 diploma in professional cookery 18-year-old Brandon Timms progressed to the Level 3 qualification and, as part of the course, got the chance to spend two weeks on a work experience placement in Florence.
Brandon, who works as a chef de partie at the Claregate pub and did his placement at the busy Boccanegra restaurant, said: “It was exciting to work in Florence and to learn new techniques and how to cook traditional Itailan food.”
He added: “If you’re sure of the industry you want to work in in the future, then college is a much better option than stopping on at school as you gain practical experience alongside your qualifications and when you get good feedback from customers it makes all the hard work you’ve put in worthwhile.”
