Professional Cookery student Ellie Jones
Being diagnosed as coeliac (gluten intolerance) two years ago sparked 17-year-old Ellie Jones’s interest in nutrition and, after completing the Level 3 diploma in professional cookery, she’s heading off to Harper Adams University in September to study for a BSc (Hons) in food technology and nutrition.
Ellie said: “Talking to my dietician made me realise that nutrition and the effects of different food on the body was what I was interested in so I signed up for the Level 3 diploma to give me the qualification I needed to apply for a degree course.
“I really enjoyed the course and had the chance to do two weeks’ work experience in a gluten-free restaurant in Florence which was a great opportunity to see how the chefs adapt their menus but still serve up delicious Italian dishes.”
Ellie worked in the popular Quinoa restaurant in the heart of Florence and is pictured preparing octopus for the dinner menu.
