Indulge… Our Academy Restaurant at Metro One is a culinary classroom that allows budding chefs the opportunity to learn their chosen trade. The students’ work is actually ordered, eaten and evaluated by customers – and with a large picture window into the kitchen you can watch them at work while you eat too!

Celebrate Christmas with us!

Kick-off the festive season by tucking-in to a delicious Christmas meal prepared, cooked and served by our catering students.

Whether you want to feast on turkey and all the trimmings and traditional Christmas pud, or sample slow cooked lamb, delicious fish, festive fruit tarts or marvellous mousses, you can be sure there’s a mouth-watering treat in store!

Creamy parsnip and apple soup served with Christmas croutons

Salmon & prawn rillettes – flaked salmon and Atlantic prawns in a creme fraiche sauce

Feta & mediterranean vegetable filo baskets – classic ratatouille topped with a feta cheese crumb



Roast breast of turkey, pigs in blankets and all the trimmings

Slow-cooked lamb served with a cranberry and mint jus

Sole Florentine – fillet of sole on a bed of spinach topped with a creamy sauce

Vegetable nut roast with apricot and goats cheeses, served with a cranberry jus



Traditional Christmas pudding with brandy sauce

Festive fruit tart and with Baileys cream

Lemon mousse served with whipped cream and ginger crunch

Salmon mousse served with king prawns, smoked salmon, dressed leaves and toasted ciabatta

Mushroom Wellington filled with creamy stilton leeks



Turkey roulade – apricot & thyme stuffed turkey escalope, wrapped in pancetta and served with sauce Robert

Rioja-braised lamb shank with caramelised shallots and chorizo

Thai-style hake in a coconut & coriander chilli broth

Vegetable nut roast with apricot and goats cheese, served with a cranberry jus



Traditional Christmas pudding served with whiskey butterscotch sauce

Festive apple & cranberry strudel with Baileys cream

Citrus-layered mousse with a raspberry compote & praline cream
