If you work in the bakery sector and want to develop skills and knowledge that go above and beyond industry standards in the craft and manufacturing of bakery and patisserie products, the Foundation Degree in Bakery and Patisserie Technology will enable you to develop sound knowledge and understanding of the science and technology involved in bakery and patisserie.

You will become skilled in bread production, confectionery and patisserie and will hone your practical skills to develop high-end luxury products that meet the demands of the industry, as well as expand your knowedge of diet and nutrition, learn how to appreciate the science and technology that supports the craft, and the importance of producing goods to accomodate food intolerance and alternative diets.

As part of the course you will work in the college's on-site bakery shop at the Wellington Road campus which will give you the opportunity to demonstrate your practical bakery skills and techniques and enable you to apply the underpinning theory and knowledge that you have learnt in a workplace environment.

What's more, alongside core modules, will have the opportunity to take additional study modules covering core business knowledge and the skills required to set up a business or new enterprise. And, if you haven't already achieved the Health and Safety Level 2 Certificate, you will have the opportunity to complete this as part of your programme of study.

The hospitality and leisure industry is undergoing rapid development and there is a need for staff with professional knowledge and skills to take on a wide range of roles, including the management of small and large scale hospitality venues, development of small niche businesses, and the production of specilaist high-end end products. It is essential therefore that when you graduate from the Foundation Degree you have developed a wide range of transferable skills, can work within and across different hospitality settings and can recognise and have the confidence to pursue your own professional development needs.

With that in mind, our approach to learning and teaching encourages you to manage your own learning, develops you as a confident and highly competent professional and promotes specialisms within the industry.

You will be allocated a personal tutor who will support you with you personal and academic development, planning and progression and you will have a designated tutorial session each week and arrange to meet with your tutor one-to-one at regular intervals (a minimum of four times a year).

Please note:  You will be required to purchase a bakery 'tool kit' and appropriate workwear / uniform to comply with health and safety and food safety and hygiene regulations. Essential kit lists and supplier information will be made available to you before the start of the course.

To access this course you are required to have:

  • Maths and English at GCSE grade 4/C or above  PLUS
  • Level 3 Diploma in Professional Bakery OR
  • Level 3 Diploma in Professional Cookery OR
  • 48 UCAS points gained through a food-related qualification
  • Relevant industry experience

For mature applicants (aged 21+) without the necessary formal qualifications, relevant industry experience will be considered.

  • Bakery and confectionery science
  • Specialist wedding confectionery 
  • Introductory patisserie skills
  • Food safety, diet and nutrition in the food industry
  • Advanced confectionery and chocolate
  • Applied nutrition, food allergens, intolerances and special diets 
  • Contemporary commercial bread production
  • Innovative contemporary patisserie design

In addition you will have the opportunity to study a number of different modules:

  • Organisational behaviour for profit generation 
  • Small business innovation and entrepreneurship 
  • Food innovation and new product development 
  • The food production manager

By studying this course, you will: 

  • Become skilled in bread production, confectionery and patisserie
  • Learn about diet and nutrition and the importance of alternative produce to accommodate food intolerance and alternative diets
  • Learn how to use professional machinery and scale production to meet the demans of large and small businesses

Many modules will include more than one form of assessment, giving you the opportunity to demonstrate your skills and understanding in a variety of ways.

Completion of the Foundation Degree will enable you to progress to:

  • Career in specialist food preparation and production
  • Career in new product development, food marketing, buying, laboratory analysis and testing, entrepreneur
  • Final year of study (Level 6) of the BA (Hons) International Hospitality Management degree at the University of Wolverhampton

You will be taught by qualified tutors who have many years' expereince of working in the bakery industry themselves and will have the opportunity to gain work expereince in the on-site bakery kitchen and shop at the Wellington Road campus, showcasing your skills and selling your products to paying customers.

Yoou will beneft from all the on-site college facilities - free car parking, sports centre and gym, Starbucks and canteen - and have access to the Study Hub which is equipped with individual work stations and quiet study areas, as well as access to Study Facilities at the University of Wolverhampton.
