Course: Professional Cookery Level 2

Ernest Madzima is studying Level 2 Professional Cookery at City of Wolverhampton College. Since joining the course, he has developed his kitchen skills, confidence and professional techniques, preparing him for a future career as a chef. 

“On this course I’ve learned so much about different dishes, where they come from and the techniques behind them. I’ve learned how to cut vegetables professionally, how to portion a whole chicken into legs, breasts and wings, and how to prepare ingredients properly. It’s helped me understand the level of precision needed in a professional kitchen. 

“My goal is to become a head chef one day and eventually open my own restaurant. This course is helping me become more professional, improve my communication, and develop new skills I’ll need in the future. I’m also learning how to work better as part of a team, which is important in any kitchen. 

“The support from tutors has been really good. They teach us proper cooking methods—how to slice, dice, follow recipes carefully and avoid mistakes. Missing one step can ruin a dish, and they make sure we understand the importance of doing things the right way. They’re always there to guide us when we need help. 

“I’ll be staying at the college next year, and I’m really looking forward to the new kitchen facilities. I hope the space will be bigger and even better for learning. Being in the city centre will also bring more energy and make the environment more exciting. 

“To anyone considering coming to college to study cookery, I’d say give it a try. It’s always good to explore new things, and you develop so many practical skills that you can use straight away. The course gives you real hands‑on experience that prepares you for working in the industry.”
